Leftover Steak Fajitas

My family and I are big fans of steak, and for some strange reason I had leftover steak recently and decided to do something different with the leftovers.This recipe was inspired because of the leftover steak, but don't worry, you don't need leftover steak!

Tips for Making Steak Fajitas

  • You can use chicken or beef. You can even make them vegetarian and add more vegetables.
  • The cut of beef you use is important. I always use skirt steak in this recipe. It's a more tender cut of meat and when sliced thin will cook up in no time.
  • Try to have everything prepped before you start cooking because this is a fast recipe!
  • Always serve with homemade salsa, sour cream and guacamole.

Ingredients

  • 1 lb skirt steak
  • Peppers of various colors
  • Yellow onion
  • Taco seasoning
  • Vegetable oil
  • Butter
  • Worchestire sauce

Directions

Slice all the peppers into the same size and width to help them cook fast and evenly.

Slice the skirt steak thin and add it to a bowl. Toss well with the taco seasoning.

Cook the meat in 2 tablespoon of oil. You can see that the meat gives off quite a bit of water while cooking. Don't worry, that will all cook out.

When the beef is about done, remove to a plate and keep warm while you cook the peppers and onions.

How to Cook the Veggies

Add the remaining oil and then add the onions and peppers. Saute them until they reach the tenderness you desire. You can also sprinkle a little more taco seasoning on top of the peppers and onions.

Add the steak back to the pan and sprinkle with a few shakes of Worcheshire sauce and continue cooking until the meat is completely cooked through and everything has blended together.

Serving Tips

Now comes the fun part! Serving and eating the steak fajitas.

Serve with grated cheddar cheese, and sour cream, homemade salsa and warm flour tortillas. Homemade guacamole is always a nice addition to add to the top as well.

Easy Steak Fajitas

An easy recipe for busy weeknights of skirt steak, onions and peppers, Served with tortillas, guacamole, sour cream, and salsa.

Ingredients

  • 1 lb skirt steak
  • 2 - 3 bell peppers of various colors
  • 1 large yellow onion
  • 2 tablespoon taco seasoning
  • 3 tablespoon vegetable oil divided
  • 1 tablespoon butter
  • A few shakes of Worcheshire sauce to taste.

Instructions

  1. Slice the skirt steak thin and against the grain.
  2. Slice the peppers and onions into strips and set aside.
  3. In a heavy pan, heat 2 tablespoon oil and add the skirt steak, stirring occasionally until almost cooked through.
  4. When the beef is almost done, remove to a plate and keep warm while you cook the peppers and onions.
  5. Add the remaining oil and then add the onions and peppers, and saute them until they reach the tenderness you desire.
  6. Add the steak back to the pan.
  7. Sprinkle with a few shakes of Worcheshire sauce and continue cooking until the meat is completely cooked through and everything has blended together.

Notes

Serve immediately with flour tortillas, guacamole, sour cream, and salsa.
